Banana & Almond Seedy Bars

International rugby player James Haskell has put together a cook book of some of his favourite & healthy recipes, that fulled him at the elite level, both for England and the British & Irish Lions. He was kind enough to share some of the recipes from his book with us. The book is available to buy here.

Ingredients (makes 8 bars)

  • 3 x Ripe bananas

  • 1 x tablespoon of coconut oil

  • 3 x tablespoons of honey

  • 2 x tablespoons of Meridian Almond Butter

  • 1 x teaspoon of vanilla extract

  • 300g Oats

  • 2 x tablespoons of ground lindseeds

  • 150f flaked almonds


  1. Preheat your over to 180 degrees & line a small baking tray with parchment.

  2. Peel the bananas, place in a saucepan and mash until smooth. Add the coconut oil, honey, almond butter & vanilla extract to the saucepan and heat over a low heat. When the ingredients have melted together, remove from the heat and pour into a large bowl.

  3. Now add the remaining ingredients and give it a good mox. Pour the mixture into the lined baking tray and press down. Bake in the over for 20 minutes or until golden brown.

  4. Allow to cool before cutting into 8 bars & serving.
