International rugby player James Haskell has put together a cook book of some of his favourite & healthy recipes, that fulled him at the elite level, both for England and the British & Irish Lions. He was kind enough to share some of the recipes from his book with us. The book is available to buy here.
Ingredients (makes 8 bars)
3 x Ripe bananas
1 x tablespoon of coconut oil
3 x tablespoons of honey
2 x tablespoons of Meridian Almond Butter
1 x teaspoon of vanilla extract
2 x tablespoons of ground lindseeds
150f flaked almonds
Preheat your over to 180 degrees & line a small baking tray with parchment.
Peel the bananas, place in a saucepan and mash until smooth. Add the coconut oil, honey, almond butter & vanilla extract to the saucepan and heat over a low heat. When the ingredients have melted together, remove from the heat and pour into a large bowl.
Now add the remaining ingredients and give it a good mox. Pour the mixture into the lined baking tray and press down. Bake in the over for 20 minutes or until golden brown.
Allow to cool before cutting into 8 bars & serving.
