Banana & Peanut Butter French Toast

This indulgent take on French toast is delicious but best eaten as an occasional treat! International rugby player James Haskell has put together a cook book of some of his favourite & healthy recipes, that fulled him at the elite level, both for England and the British & Irish Lions. He was kind enough to share some of the recipes from his book with us. The book is available to buy here.

Ingredients (Serves 2)(Cooking Time: 10 mins)

  • 2 x bananas

  • 2 x tablespoons caster sugar

  • 2 x large eggs

  • 2 x knobs of butter

  • 4 x slices of brioche

  • 2 x tablespoons cherry jam

  • 2 x tablespoons Meridian peanut butter

  • 2 x tablespoons Greek yoghurt

  • 100g x fresh, pitted cherries


  • Preheat your grill to high. Cut the bananas in half, then slice them length-ways into pieces roughly 1cm thick. Place them on an oven tray and sprinkle over the caster sugar. Pop under the grill and cook until the sugar has caramelised. Allow to cool and set to one side.

  • Crack the eggs into a bowl and whisk well. Melt the butter in a fryin pan over a medium heat. Once the butter is bubbling away, dip the brioche slices into the egg one at a time then place in the pan. Cook for one minute on each side or until golden brown. Remove from the pan and divide between two plates.

  • Top the French toast with the cherry jam, peanut butter and Greek yoghurt. Place the bananas on top and scatter over the fresh cherries and serve immediately.
