Banana Bread Slow Cooker Oats

This recipe originally appeared on Georgia's website here

  • 1 1/2 cups steel cut oats
  • 2 cups water
  • 2 cups milk of choice
  • 2 cups Seva maple water (you can use more plain water, or coconut water instead)
  • 2 large ripe bananas, mashed
  • A couple of handfuls of walnuts, roughly chopped
  • 2 tbsp chia seeds
  • 2 tsp vanilla extract
  • 2 tsp cinnamon
  • 1 tsp nutmeg
  • A good pinch of salt
  • Butter, for greasing

  • Banana
  • Walnuts
  • Chia seeds
  • Blueberries
  • Cacao nibs
  • Peanut butter

Grease the inside a slow cooker with a thin layer of butter, to help prevent sticking. Place all ingredients in the slow cooker and give them a stir to combine. Cook on low for 8 hours. If possible, occasionally give the mixture a stir to stop it burning on the sides.

To serve, divide mixture into bowls and add desired toppings. Leftover mixture will keep in a container in the fridge for a few days. If you need to reheat, add a small amount of milk or water to the mix and reheat for a couple of minutes in the microwave or on the stove.

Serves 6.
