Banana, Walnut & Cinnamon Muffins
Try these healthy muffins in 2018, from Olympic athlete Georgia Nanscawen...
- 1 cup teff flour
- 2 tbsp cornflour
- 1 tsp baking soda
- 3 eggs
- 2 very ripe large bananas, mashed, plus extra slices for topping
- 1/4 cup natural yogurt
- 1 tsp vanilla
- 2 tbsp maple syrup
- Pinch of salt
- 1/2 cup walnuts, roughy chopped, plus extra for topping
- 1 tsp cinnamon, plus extra for topping
Preheat oven to 180 degrees C and line a muffin tray.
Combine teff, cornflour and baking soda in a large bowl. Whisk in eggs, then add the rest of the ingredients and whisk well to combine.
Pour batter into prepared muffin tray and top with extra banana slices, walnuts and cinnamon.
Bake for around 25 minutes until firm on top and skewer comes out clean.
Makes around 5 large muffins or 10 smaller muffins.
