Mexican Chilaquiles

Cooking time 15 minutes – Moderate Carb (MC) (PostWO) (CL)

Enjoy as a side or as your main meal with an awesome mixture of nutrients you really can’t go wrong! AND the only cooking you have to do is on some tortillas… so it’s super quick!

Ingredients (Serves 2)

  • 2 White Tortilla wraps
  • 1 tsp olive oil (can use 1kcal spray)
  • 2 pre-oven cooked chicken breasts
  • ½ Red onion
  • Fresh Coriander
  • Salsa (homemade or bought)


CHOP tortilla into small triangles
FRY in a pan with the olive oil till crispy
DRY off oil and put back in the pan
ADD all the salsa and cook through
FINELY chop red onion and coriander
TEAR your chicken breast into pieces
SERVE the salsa tortilla mix
TOP with red onion, coriander, chicken and creme fraiche

8g Fat

Need more Carbs? serve with 125g cooked white rice on the side to add another 35g of carbohydrate

Not in the post-workout time? Add 1 tbsp of low fat crème fraiche or sour cream and switch to a wholegrain tortilla for more steady release of carbohydrate
