Blogger & England Touch Rugby player Jon came down to the kitchen to whip-up some super quick, and super tasty vegan energy balls. - 150g of blanched almonds
- 1 cup of dried apricots
- 5 medjool dates
- Zest of ½ a lemon
- 1 tbsp. of desiccated coconut
- 1tbsp. of manuka honey
- 1 tsp. of baobab (optional)
- Add all the ingredients into a blender, and blend thoroughly until mixed & sticky.
- In the palm of your hand, take a small amount of the mix and roll into golf-ball sized balls.
