Vegetarian One-Pot-Wonder

Luke made an amazing vegetarian one-pot-wonder:


Black Bean and Tomato one-pot wonder

Equipment
- 1 large pot, or a large frying pan
- large flat baking tray (for oven)

Ingredients
coconut oil (Tbs)
1 medium white onion
3 cloves of garlic
1 tin of black beans
cherry/plum vine tomatoes (large handful)
1 large lemon
2 eggs
large handful of spinach
1 ripe avocado
fresh coriander
mild chilli powder (Tbs)
ginger (fresh best or dried)
tumeric (fresh best or dried)
